Picadillo with chipotle, potatoes and carrots

Ingredients:

 

  • ½ Kg Ground Beef or Soy
  • 2 Chopped Garlic Cloves
  • 1 tsp Salt
  • ¼ tsp Black Pepper
  • 1-2 San Marcos Chipotles
  • 1 Bay Leaf
  • ¼ cup Vegetable Oil
  • ½ Chopped Onion
  • 1 cup Tomato Puree
  • 3 Red Tomatoes (blended and strained)
  • 2 Carrots chopped in squares
  • 2 potatoes chopped in squares

Instructions:

01. Season the meat with garlic, salt, pepper, chipotles and the bay leaf. Let it sit for 20 minutes.

02. Heat the oil and add onion. Then you can add the meat and cook, mixing until you get picadillo.

03. Add both purees and the vegetables, cook at low heat for 25 minutes. Add water if needed.

San Marcos tip:
If you use soy, hydrate it by seasoning the water with the ingredients in the first bullet.

Shredded beef with jalapeño tostadas

Ingredients:

  • 1 can of San Marcos Jalapeño Slices (215g)
  • 1 can of San Marcos Refried Black Beans
  • Tostadas
  • 500g Cooked Shredded Beef
  • ½ cup cream
  • ½ cup Sliced Onion
  • 1 Finely Chopped Garlic Clove
  • 6 Lettuce Leaves (finely chopped)
  • Salt and Pepper

Instructions:

01. Fry the meat with the onion, garlic and the jalapeños’ vinegar.

02. Fry the beans and add 2 Tbsp of jalapeños.

03. Put a layer of beans in your tostada, as well as the meat and lettuce. Add some cream and some jalapeños.

San Marcos TIP:

You can try it with avocado too.

Pork feet

Ingredients:

 

  • 1 Kg Clean Pork Feet
  • 2 tsp Salt
  • ¾ Chopped Onion
  • 5 Garlic Cloves
  • 2 Peppers
  • 2 Branches of Thyme, Marjoram and Oregano
  • 4 Bay Leaves
  • ½ cup Olive Oil
  • 2 Chopped Carrots
  • 1 can of San Marcos Rajas (205g)
  • ½ cup of San Marcos White Vinegar

Instructions:


01. In a pot, put the pork feet and cover them with water, add salt, ¼ onion, 2 garlic cloves, pepper and half the herbs.

02. Let it cook for 1.30 hour and drain.

03. Heat the olive oil and add the remaining onion, garlic and carrots. Cook until soft and add the rajas with their vinegar, the white vinegar and the herbs and salt.

04. Cook for 5 minutes and add the feet , let them sit overnight.

San Marcos tip:
Make your tostadas, you just have to take the bones out of them and chop them.

Roasted salmon with tzatziqui chipotle and yogurt sauce

Ingredients:

Tzatziqui Sauce (2 ½ cups)

  • 1 Peeled Cucumber in Half
  • 2 Lemons (zest and juice)
  • 2 cups Greek Yogurt
  • 2 Tbsp Finely Chopped Fresh Dill
  • 2 Tbsp Finely Chopped Fresh Mint
  • 1-2 Tbsp San Marcos Chipotle Sauce
  • Salt and Pepper

Salmon:

  • Salt and Pepper
  • 4 Slices of Fresh Salmon with Skin (230g each)
  • 1 Orange (juice)
  • 2 Lemons (juice)
  • 1 Tbsp Olive Oil

Instructions:


01. For the sauce, grate the cucumber, drain and wait until it’s not longer wet. Mix the cucumber with the lemon juice, yogurt, dill and mint. Season with Chipotle Sauce, salt and pepper.

02. For the salmon: Preheat the oven at 200 ºC, season the fillets and marinate with orange and lemon juice in a glas container for 30 minutes.

03. Rub the salmons with olive oil, the skin has to be facing down. Bake and serve with tzatziqui sauce right after.

San Marcos tip: You can use tuna or any other fish.
